TASTING NOTES

 


The DeMorgenzon Reserve Cabernet Sauvignon 2023 displays a deep garnet core with a vibrant ruby rim. On the nose, on will experience an intensity and perfume, with a combination of red and black fruit. Aromatically, cassis, blackberry and ripe raspberry emanate. The palate is structured, yet refined, with ripe blackcurrant and plum at its core. This flavour profile is supported by its fine-grained structure and fresh acidity. This helps with an elegant and long finish. Cellaring potential: 10-15 years but can be enjoyed immediately too.

VINEYARDS

 


Sourced from single vineyard Cabernet Sauvignon block on the Estate and situated on a North – Northeast facing gentle slope, roughly 150m above sea level. The vineyard benefits from the cooling maritime breezes of the False Bay, while the rich, granite-derived soils interspersed with clay and koffieklip offer great drainage as well as water retention. The single vineyard has 4 different clones planted on it, offering varying complexities of flavour and tannin structure, giving it the best opportunity to produce world class Cabernet Sauvignon.

VINTAGE

 


A mild yet wet winter ensured optimal soil conditions as the growing season began. A relatively cool spring, punctuated by occasional rain, led to delayed bud break. However, warm weather in January helped correct any early-season unevenness. The continued moderate weather throughout the season allowed the harvest to progress at an even pace, enabling the winery to attend to each parcel as it arrived.

VINIFICATION AND MATURATION

 


The harvesting is conducted early morning, while the grapes are still cool. After being destemmed, the grapes are whole berry fermented in a combination of concrete and stainless-steel tank, while only receiving intermittent pump overs. This helps with an elegant extraction, producing soft, silky tannins. The wines are matured in 300L French oak barrels for 18 months, with a 40% new oak composition.
